Sweet & Spicy Chicken Wings With Yam Or Plantain Fries

Ingredients
- 10 - 12 chicken wings
- 1/2 tablespoon garlic paste
- 1/4 tablespoon onion powder
- 1/4 teaspoon white pepper or any pepper of choice
- Salt to taste
- Drizzle of vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 5 minced scotch bonnet peppers atarodo
- 1 cup water
Instructions
- Season the chicken wings with garlic paste, onion powder, white pepper and salt to taste.
- Drizzle some vegetable oil over the chicken and toss to combine ensuring the chicken is fully coated with the seasoning.
- Place a pan on medium heat and drizzle some more vegetable oil. Allow to heat up slightly.
- Place the chicken pieces into the pan, brown on one side for 2-3 minutes, flip to the other side and allow to brown another 3 minutes. Take it out of the pan, place on a plate and set aside.
- In the same pan, add the soy sauce, brown sugar, ketchup, scotch bonnet peppers and water and leave to simmer for 1 mouth.
- Then add the browned chicken pieces, and coat each piece generously with the sauce.
- Cover the pan and allow to cook for 7-8 minutes or until a dark, sticky sauce is formed and has married well with the chicken.
- Take off the heat and serve with yam or plantain fries.

Notes
- Pat the chicken dry after washing to rid it of excess liquid.
- Marinade chicken for as long as 24 hours if desired.
