Sweet Potato Porridge

Ingredients
  

  • 6 large sweet potatoes
  • 2 tablespoons olive oil
  • 4 pieces fresh tomatoes
  • 2 red chili bell pepper tatashe
  • 4 scotch bonnet peppers
  • 1 large onion bulb chopped
  • 3 garlic cloves
  • 1 red bell pepper finely diced
  • 1 green bell pepper finely diced
  • 1/4 cup chopped spring onions
  • 2 cups chicken stock or water
  • 3 bay leaves
  • 2 chicken seasoning cubes
  • 1/4 tsp curry powder
  • 1/8 tsp thyme
  • 1/8 crushed chili flakes
  • 1/4 tsp chili powder
  • 1/8 tsp dry rosemary
  • 1/8 tsp ginger powder
  • Salt to taste

Instructions
 

  • Start by blending the tomatoes, chili red bell peppers(tatashe), scotch bonnet pepper, garlic cloves and half of the onion bulb until a smooth purée is formed. Set aside.
  • Heat up oil in a pot on medium heat.
  • Then add the chopped onions and sauté for 30-45 seconds or until onions are translucent.
  • Next add chicken stock or water and blended tomato purée, stir to combine and bring to a rolling boil. This should take about 5 minutes.
  • While it is boiling, prepare and wash the sweet potatoes thoroughly, peel off the skin and cut into bite size chunks.
  • Transfer sweet potatoes to the pot of boiling stock and add seasoning cubes, curry powder, thyme, crushed chili flakes, chili powder, rosemary, ginger powder and salt to taste. Stir to combine. Then throw in the bay leaves and ensure they are completely submerged into the liquid.
  • Leave to cook for about 15-20 minutes. If you cut your sweet potatoes into larger chunks, you might need more time for it to cook through.
  • Finally, add the finely diced bell peppers and spring onions, stir to combine and take off the heat immediately.
