Oats Pancakes With Berry Sauce

Ingredients
- 1 1/2 cups oats flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 250 ml or 1 cup liquid milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1/2 cup raisins Optional
- Maple syrup or honey For serving
Instructions
- In a processor, place rolled oats and blitz until a fine, smooth consistency resembling that of flour is formed.
- Transfer oats flour to a mixing bowl, add baking powder, baking soda, cinnamon, nutmeg and salt, stir to combine.
- In a separate mixing bowl, add milk, egg and vanilla extract, whisk to combine.
- Afterwards, transfer wet ingredients into dry ingredients and mix until fully combined but not over mixed.
- Add raisins at this point if you decide to use it. I personally love to add raisins, it lends some sweetness to this recipe.
- Heat up a non-stick pan or griddle on medium to low heat and when it is hot, add 1/4 cup of the batter, allow to brown on one side for about 1 minute or until you start to notice bubbles on top of the batter. Then flip it gently and allow it to brown on the other side for about 30 seconds. Take out of the pan and transfer to a plate.
Notes
Note 1: Not to worry if it doesn’t come out as fine as flour, it will still work just fine. Just ensure you have 1 1/2 cups of the oat flour after processing.
Note 2: If you are not using a non-stick pan (which is very highly recommended, grease the pan with cooking spray or melted butter or oil so the batter doesn’t stick to the bottom.
- Repeat the process until you have exhausted all your batter.
- You can serve with maple syrup or honey but I personally love to enjoy this with a berry sauce.
