  • 1 1/2 cups oat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 cup liquid milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1/2 cup raisins (Optional)
  • Maple syrup or honey


  • In a processor, place rolled oats and blitz until a fine, smooth consistency resembling that of flour is formed.
  • Winnie’s Note: Not to worry if it doesn’t come out as fine as flour, it will still work just fine. Just ensure you have 1 1/2 cups of the oat flour after processing.
  • Transfer oats flour to a mixing bowl, add baking powder, baking soda, cinnamon, nutmeg and salt, stir to combine.
  • In a separate mixing bowl, add milk, egg and vanilla extract, whisk to combine.
  • Afterwards, transfer wet ingredients into dry ingredients and mix until fully combined but not over mixed.
  • Add raisins at this point if you decide to use it. I personally love to add raisins, it lends some sweetness to this recipe.
  • Heat up a non-stick pan or griddle on medium to low heat and when it is hot, add 1/4 cup of the batter, allow to brown on one side for about 1 minute or until you start to notice bubbles on top of the batter. Then flip it gently and allow it to brown on the other side for about30 seconds. Take out of the pan and transfer to a plate
  • Winnie’s Note: If you are not using a non-stick pan (which is very highly recommended, grease the pan with cooking spray or melted butter or oil so the batter doesn’t stick to the bottom.
  • Repeat the process until you have exhausted all your batter.
  • Winnie’s Note: as you proceed, you will observe that your batter starts to thicken up really fast because oats absorb water quickly. What you can do is add some more liquid milk to loosen it up and get it back to its original consistency. Don’t worry, it will still taste perfect
  • You can serve with maple syrup or honey but I personally love to enjoy this with a berry sauce.
