Pineapple Upside-down Cake


Pineapple upside cake is the perfect dessert to serve at a dinner party or special event. Its sweet and savory taste makes it appealing to any taste-bud. I am a big fan of anything that is very fast and easy to prepare and that is why it is one of my favorite dessert recipes. Just count 1 to 3 and you are already done. Lol. Prep Time: 20mins. Cook time: 30-35mins. Yield: 8 big slices. Level: Very easy.


  • 1/2 cup brown sugar
  • 1/4 cup semi-melted butter
  • 1/2 cup melted butter
  • 8 pineapple rings
  • 8 maraschino cherries
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup pineapple
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt


  • In a mixing bowl, add light brown sugar and semi-melted butter. Whisk together until silky.
  • Afterwards, pour content into the bottom of a cake pan, smooth out surface until it covers the entire surface of the pan.
  • Take pineapple rings and lay it on top of the batter, then put one cherry at the center of each pineapple. Set aside.
  • In another mixing bowl, add melted butter and granulated sugar, whisk until creamy. Then add 2 eggs, whisk again until fully incorporated.
  • Next, add pineapple juice (its usually used to preserve the pineapple rings in the can), whisk thoroughly to combine.
  • Sift in flour, baking powder and salt. Whisk one more time till smooth and silky and lump free. Lay batter over pineapples in the baking pan and spread around to completely cover the surface.
  • Place in a 350 degrees Fahrenheit pre-heated oven for 30 minutes or until a tooth pick inserted into the center of the cake comes out smooth.
