INGREDIENTS

  • 3 large ripe plantain, diced
  • 1 kg chicken gizzard, cut into bite sizes
  • Vegetable oil for frying
  • 1 inch root ginger, minced
  • 4 garlic cloves, minced
  • 1 medium onion bulb, chopped
  • 5 fresh tomatoes, chopped
  • 2 fresh chilli peppers, chopped
  • 3 seasoning cubes
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt to taste

PROCEDURE

  • In a small pot, season gizzard with 1/2 teaspoon curry powder, 1/2 teaspoon thyme, 1/2 of the diced onion, 2 seasoning cubes, 1/2 of the minced garlic, ginger, and salt. Mix thoroughly, and place on medium heat to cook for 20-25 minutes.
  • Pre-heat vegetable oil in a frying pan, fry plantain until golden brown. Lay it on a platter lined with paper towel to soak up the extra oil.
  • When gizzard is cooked, fry in the same oil used in frying plantain.
  • In a separate pot, heat up 3 table spoons vegetable oil, add remaining diced onion and garlic, stir fry until onions are translucent.
  • Add diced fresh tomatoes and pepper and allow to simmer for 3-4 minutes.
  • Next, add remaining curry powder, thyme, knorr cubes and salt to taste. Leave to cook for 5 minutes on medium heat.
  • In a separate pot, add fried plantain and gizzard, stir to combine then add tomato sauce. Stir again thoroughly.
  • Finally, stir in diced green pepper, just for a pop of color.
  • Serve immediately.

Note– you can serve this alone as an appetizer or as a main dish with white rice or pasta. Enjoy!!!
