Chicken in Chinese Sauce Recipe

Chicken in chinese sauce served with steamed basmati rice is my all time favorite. Who says you have to live in China before you can eat like the Chinese???? This dish is so easy to prepare and it tastes super great too. 

INGREDIENTS

  • 2 large chicken breasts/fillets
  • 1 medium onion bulb
  • 5 garlic cloves
  • 5 medium carrots
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 teaspoon curry powder
  • 1 cooking spoon blended sesame oil
  • 1 cooking spoon soy sauce
  • 1 cooking oyster sauce
  • 3 tablespoon vegetable oil
  • 3 seasoning cubes
  • 1 tablespoon chili pepper
  • 1 table spoon curry powder
  • 1/2 teaspoon thyme
  • Salt to taste
  • 2 cups water for sauce
  • 2 cups water to cook basmati rice
  • 2 tablespoon corn flour + 1/4 cup of water to dissolve it
  • 2 cups basmati rice

 PROCEDURE

Chinese Sauce

  • Wash chicken breast gently with water.
  • Cut chicken breast into small cubes or strips.
  • Season chicken with 1/2 part onion, 1/2 part garlic, 1/2 tbsp curry powder, 1/4 teaspoon thyme, one seasoning cube, 1/2 table spoon chili pepper, salt and 1 cup of water.
  • Set on medium heat and bring to boil. Chicken breasts are boneless and very soft and for this reason do not take forever to cook, be careful not to overcook them.
  • Cut carrots, green and red bell peppers in thin strips.
  • Dice remaining onions.
  • Heat up a oil in a wok or medium size pot.
  • Sauté onions and garlic for 1 minute.
  • Stir in carrots and saute for 2 minutes to remove the crunch from the carrots.
  • Stir in 2 cups chicken stock (water gotten after cooking the chicken or store bought chicken stock). If the chicken stock is not sufficient, you can use water to make up for it.
  • Add remaining curry powder, thyme,  seasoning cubes, chili pepper and salt to taste
  • Add soy sauce, oyster sauce and blended sesame oil and leave to simmer for 3mins.
  • Mix corn flour in water till a light paste is formed. Stir into the sauce pot. This will thicken the sauce.
  • Afterwards, add fried chicken breasts, stir to combine.
  • Finally, add the red and green bell pepper strips, stir to combine and take off the heat immediately.

Basmati Rice

  • Pre-heat 2 cups water in a pot on medium heat.
  • Wash basmati rice thoroughly with tap water to remove excess starch.
  • Add rice to boiling water.
  • Add a reasonable amount of salt, lemon juice and vegetable oil…this will prevent the rice from sticking together.
  • Cook till soft.

    We can cook any type of basmati rice this way?….Cause i always have to soak mine for 2hrs or so …it won’t be this white if i don’t…
